Interview: The founder of Michigan based restaurant inspired by Studio Ghibli films
For Studio Ghibli fans and curious restaurant goers we speak with Chef Jinta Cha the founder and lead of Miyazaki Sushi the innovative Michigan based restaurant blending traditional with innovative Japanese cuisine inspired by the work of Hayao Miyazaki.
Could you start by telling us a little about your professional background? What made you want to be a chef?
“As the Founder and Lead at Miyazaki Sushi, my career in the culinary industry spans over a decade, marked by a fusion of traditional techniques and modern innovation. My initial foray into this field, notably through Project Goblin, laid the groundwork for my deep appreciation of the culinary arts and restaurant management. The decision to become a chef was driven by a passion for creating, a desire to innovate within the traditional bounds of sushi making, and a commitment to sharing this art with others. My journey has been one of continuous learning and exploration, aiming to blend the precision of sushi craftsmanship with technological advancements to enhance the dining experience. It's this blend of tradition and innovation that has defined my career and fueled my ambition to lead Miyazaki Sushi with a vision for excellence and a humble approach to gastronomy.”
What's your favorite Studio Ghibili film?
“ My Neighbor Totoro holds a special place in my heart for its enchanting depiction of the harmony between nature and humanity. This film beautifully portrays the joy in life's simple moments, a theme that resonates deeply with our mission at Miyazaki Sushi. It inspires our efforts to create beautiful, memorable spaces where guests can enjoy our culinary creations in an environment that reflects the serenity and beauty of the natural world.”
Miyazaki US has a pretty unique concept, blending anime themes with fine dining, What made you want to blend those two worlds into one experience?
“Miyazaki Sushi was born from a vision to create a casual yet memorable dining and takeout experience. The decision to incorporate Hayao Miyazaki's art within our spaces was driven by a shared respect for his craftsmanship and a desire to introduce his work to sushi lovers in a unique setting. Our focus is on creating beautiful and inviting spaces where guests can enjoy high-quality sushi, whether they're dining in or ordering for takeout or delivery. As we evolve, our efforts to enhance the dine-in experience reflect our commitment to not just serving sushi but creating memorable moments for our guests.”
What's an underrated Japanese dish you wish more people would try?
“One underrated Japanese dish that I believe deserves more recognition is 'Donburi' – a simple yet versatile rice bowl dish that offers endless possibilities for flavor and presentation. At our restaurant, we take pride in our Sake Don, Unagi Don, and Chirashi Don, each offering a distinct taste experience that highlights the freshness and quality of our ingredients. Donburi exemplifies the Japanese culinary philosophy of harmony and simplicity, and it's a dish that truly allows the ingredients to shine”
